A decade ago, if you told someone their future burger might come from anything else than animal meat, they'd probably assume you were hallucinating. But in today's world of health-conscious, sustainability-driven consumers, alternative proteins are having their moment in the spotlight.

From superfoods to never-heard-of ingredients, the food industry has never been this diverse (and confusing!?). Let’s be honest, your granny or even your mom did not care if they were intolerant to gluten or lactose; they dealt with the situation empirically. Nowadays, consumers and businesses in the western world are investigating nutritional habits, digestive functions and ingredient labels like the detective hunting his suspect!

And the numbers don’t lie. The global alternative protein market was valued recently at a staggering $108.1 billion and is projected to grow to nearly $590 billion by 2035. In just the past decade, patent filings for alternative proteins have skyrocketed by 960%, signaling an industry where science, sustainability and innovation collide. Europe is riding this wave, with countries like Germany, the UK, and France leading the charge in consumption, while Switzerland, the Netherlands and Germany push boundaries with cutting-edge research and patents.
